ABOUT THE COLLABORATION

Le Comptoir presents a collaboration between Chefs Nicholas Chew (Bibo) , Sean Mell (Silencio) and Olivier Bellin (The Ocean).

The three award-winning chefs have joined forces to create a dish that pays tribute to Hong Kong’s reputation as a melting pot of culture and food as well as bringing together each chef’s vastly different backgrounds: Nicholas’s precise yet creative French-Asian dishes, Sean’s modern rendition of traditional Japanese favourites and Olivier’s refined execution of Breton cuisine that combines the best of land and sea.

“Our goal was to create a completely unique dish that highlights, represents yet harmonizes all three of our cuisines — most importantly a dish that people would have fun eating, to represent the spirit of TASTE’s lively food festival atmosphere,” explains Silencio Executive Chef Sean Mell.

Chefs Nicholas, Sean and Olivier will be also be showcasing signature dishes from their respective restaurants, representing elements from land to sea, ending with a sweet finalé.

Bibo

Since May 2014, Bibo has garnered international recognition and become a fine dining mecca for gourmets and art-lovers alike, presenting modern French cuisine in a unique environment that can be found nowhere else in Hong Kong, if not the world, thanks to its collection of world renown contemporary art.

Bibo is the first restaurant in Hong Kong to be named a member of the prestigious Relais & Chateaux group of properties.

Silencio

SILENCIO, opening in March 2019, is the latest restaurant by award-winning hospitality group Le Comptoir. As Hong Kong’s only contemporary Japanese izakaya featuring a live entertainment twist, Silencio recreates the vibrant ambience of Japan’s much-loved drinking dens, uplifted with sleek interiors, an impressive line-up of live jazz and a menu of reimagined Japanese izakaya favourites.

The Ocean

Michelin-starred The Ocean by Olivier Bellin is an exquisite dining experience by Le Comptoir, showcasing Breton cuisine that combines the best of earth and sea. The Ocean was awarded its first Michelin star in 2017 and is the first and only restaurant in Hong Kong’s southside to have received the prestigious culinary honour.

Following The Ocean’s award of a consecutive Michelin star by the 2019 MICHELIN Guide Hong Kong & Macau in December 2018, Le Comptoir will be relocating The Ocean to a new address in Central to build on it’s acclaim and achievement.
