Chang and Narisara are the husband and wife duo running the kitchen at one of Hong Kong’s favourite neighbourhood venues, Chachawan. Together they boast over 40 years’ experience cooking Thai cuisine, particularly that of the Issan region – a culinary discourse famously known for a notorious but controlled application of spice. The loving preparation of food has always been integral to the identities of both, and together as a couple. At a young age, Chang diligently assisted his mother prepare staff meals for the workers in the family’s sugar cane factory while Narisara grew up cooking for her family in east Prachin Buri.
The two married in Thailand before moving to Hong Kong, and worked at Thai restaurants before joining Chachawan’s founding team. During service, you’ll find Narisara calling the pass – meticulously finishing each dish before it’s run out to the buzzing bi-level dining room, while Chang serves as Head Chef, commanding a culinary team of nine, spread across several stations from grill to salad. Having recently celebrated their 10th wedding anniversary, the pair believe the firm foundations of their relationship have allowed them to creatively push Chachawan to occupy the beloved status it holds on Hong Kong’s dining scene.
